An Afternoon Snack


Today I wanted to share a recipe I tried out yesterday afternoon with you all. I found it over at Jade's blog and thought it sounded like a healthier teatime treat to indulge in. It was very easy to make and according to Jade, can also be frozen. I did find that the slice was quite soft when I initially took it out of the oven but it firmed up once cool (a bit like Anzac biscuits). Here's Jade's recipe...


Muesli Slice

125g butter
⅓ cup sugar
2 tbspn honey
1 cup rolled oats
½ desiccated coconut
½ cup dried apricots
½ cup sultanas
½ cup self raising flour

Stir butter, sugar and honey in a large saucepan over medium heat, without boiling until the sugar dissolves. Remove from heat and stir in the remaining ingredients. Press the mixture firmly into a 20x30cm pan. Bake for approx 20 minutes in a medium oven. If you take it out of the oven and it seems too crumbly pop back into the oven for another 5 minutes or so.

  2. Mmm I love muesli slice and this sounds like a nice easy one. I was thinking of doing a post on a couple of healthy snacks that I made for the girls to have in their lunch boxes, I'll do a post tonight with the recipes. I hope you are feeling well. xo

  9. OMG Amanda I read your blog post at 10pm and new this would be perfect for our picnic tomorrow, I had all the ingredients. It was in the oven by 10.30pm. I twas so quick and easy. I used a lower fat butter and it still turned out fantastic. I hope all the kids and mums enjoy it tomorrow. Thanks

  11. Jill - I'm so glad you gave it a go and hope you all enjoy it at the picnic. Grace has been asking for 'more' every time I get out the tin :)

    Hilary - I'll be doing an Anzac biscuit post next week for Anzac Day hopefully :) I guess sultanas are like raisins, the muesli part is basically oats and coconut.
