Cookies You Have To Try…


Thanks to some wonderful friends and family members and thanks to all the meals I made and froze at the end of my pregnancy, I haven’t had to do a lot of cooking lately. This has been extremely helpful as Sophie’s most unsettled time is usually in the evening when dinner needs to be sorted out. I have rather missed cooking though and while I’ll have to work out how best to organise and prepare meals with a newborn in the house, I am eager to get back into the kitchen.

Last week, keen for something sweet to have with my afternoon cuppa, I made a batch of biscuits from a new recipe I’d seen a while back on A Spoonful Of Sugar which I’d been wanting to try. It took me all afternoon to make them in between feeding Sophie and keeping Grace occupied, but it was worth it as they were delicious. Do yourself a favour and buy a jar of Nutella this weekend and make a batch. Be sure to enjoy several while they’re still warm too. Here’s the recipe I followed from A Spoonful Of Sugar


Nutella and Oat Cookies

½ cup butter, softened
½ cup sugar
½ cup brown sugar
½ cup Nutella
1 egg
2 tsp vanilla
1 cup plain flour
1 cup rolled oats
1 tsp baking soda
¼ tsp salt

Preheat oven to 180 degrees C (350°F). Line a cookie sheet (or two) with parchment paper. Cream the butter, sugar, and brown sugar together with an electric mixer. Add the egg, vanilla, and Nutella and mix until well incorporated. Add the flour, oats, baking soda, and salt and mix until combined. Roll into balls, flatten with a fork, and bake for 7 minutes. Allow cookies to cool on wire rack.

  4. It was definitely a one off girls, all I've managed since then are packet cakes.

    Anna - if you love Nutella, you HAVE to bake these... the raw mixture tastes divine too :)

  7. Tammi - believe me, it was no easy task, that's why it took me all afternoon... rolling balls of cookie dough is very hard when you have a baby in your arms :)

    I've been baking a bit more lately and my new specialty is Caramel Slice, we had three Danish teens come babysit Will on Wed night so G and I could go for dinner for his actual birthday and I made it for them. They said in their cute accent 'I have never tasted a cake so good' hehehhe so I was quite chuffed :) I hope you're managing to get some naps in and all is going as smoothly as can be expected!   10. Ah, it is hard trying to cook and organise food for the week with two to look after. I still struggle most days and Kian's 11 months. My biggest tip would be to batch cook every time you make a meal. That's what I do. I never cook with less than 1kg of mince at a time, for instance (I make two lasagne dishes etc) so the boys either get the same meal the following day, or I pop meals in the freezer for the week after. Always double or treble recipes, hubbie can take leftovers for work, and you get a night off from cooking. I wouldn't survive otherwise! Hope that helps.

  11. Oh dear , is the smallest jar of Nutella 1/2 cup ? I purposely dont buy it as if I get a craving for chocolate , I get a big ( really big) spoon of nutella & sit down & slowly eat it, then wish I hadnt !
    But I will try this recipie

  17. Wow Amanda! I so admire you managing to bake these yummy looking cookies! I will add them to my list of recipes to try when i reach my goal :-). If I can wait that long :-)). Hope the sleep keeps improving, sleep deprivation is the pits :-(. But you can forgive them when they are so cute! Tanya x
