A New Simple Soup



One of the things I enjoy most about the cooler winter months is being able to cook lots of delicious soups to warm our bellies. More often than not at this time of year, we have soup on a Sunday night for tea with something simple alongside like a toasted sandwich. Last weekend I tried out a new recipe from ‘Frost Bite’ and it was a winner here. If you like tomato based soups like minestrone, than this one’s for you. Here’s the recipe:


Tomato, Zucchini & Basil Soup

Serves 4

olive oil
1 onion, peeled and diced
1 clove garlic, crushed
2 x 400g tin Roma tomatoes, crushed
2 tbsp tomato paste
5 medium-sized courgettes (I used 2 small zucchini instead), sliced
large handful fresh basil, roughly chopped
3 cups vegetable stock
sea salt & pepper


Heat oil in a large saucepan over low heat and add onion and garlic.  Cook for a few minutes until the onion is translucent. Add remaining ingredients and stir well.  Cover with lid and simmer for 20-25 minutes of until the vegetables are tender. Puree or blend.



I've been cooking up a storm here this week in our kitchen.  However most of it has been in the form of baby purees for Sophie which should now last me for many weeks ahead.  Grace and I did manage to make a muesli slice though which we've been enjoying the last few days for afternoon tea.

Wishing everyone a wonderful weekend ahead.  It's the Foundation Day long weekend here in Perth.  In our household we'll hopefully be resting, relaxing and (fingers crossed) catching up on sleep.  Do you have any special plans?  I'd love to hear what you'll be up to...

    Love that you & Grace are cookin' up a storm together in the kitchen! FUN!!!!
    I too have been busy doing baby foods....but my hungry little monster is getting through them too fast! LOL! Making more tomorrow....trying a Tuna one for him.

  7. I love soup too. I've got an excellent VERY EASY cauliflower and bacon soup recipe if you are interested. It is one whole cauliflower, about six rindless pieces of bacon, one large onion, one large container of liquid chicken stock. Roughly chop all ingredients. Throw into a large saucepan/boiler. Cook until cauliflower is soft. I then Bamix the lot until smooth. Serve with crusty bread. That is it. Totally divine and so healthy. You could add cream to it but the cauliflower gives it a really smooth creamy consistency and you honestly don't need it. Let me know what you think.

  11. Soup and homemade sourdough are our winter staples - I will add this to the folder. We had a garage sale yesterday, listened to the rain, went out for cake in the forest, walked on the beach. And it aint over yet! I was a little sad to learn today that it is Foundation Day no more - so happy inaugural Western Australia to you all!

  12. This looks like such a simple soup to make thanks for the recipe :) Iv made some pots of soup the last few weekends as well, and we've only just hit winter officially this week. I feel healthy when I have soup always full of veggies and goodness. But then I put lashings on butter on the bread and then the healthy goes out the window :)
